Legend (the 1980s Ridley Scott film) is what immediately comes to my mind for visual effects, as well as Crouching Tiger Hidden Dragon, especially the desert scenes and the final monastery. If you're going for use of color contrast, however, the use of red in Schindler's List is probably about as striking as you can get.
